In the Rhône region, Des Saveurs et des Ailes supports vulnerable individuals who want to start a business in the restaurant industry. The program offers them a practical and educational framework, including a food truck school, professional lab, and incubator, to help them turn their ideas into viable projects.
A springboard for entrepreneurship in the restaurant industry
In Lyon, since 2017, Des Saveurs et Des Ailes has been supporting people in precarious situations who want to turn their passion for cooking into a real professional activity, and thus gain independence.
These people face major obstacles: lack of a network, technical knowledge, capital, or proficiency in the French language. Des Saveurs et Des Ailes offers them a comprehensive three-step program:
- Discovering the entrepreneurial process: information sessions on the steps involved in starting a business and the players in the local ecosystem.
- Training: 11 intensive weeks combining theory and practice, in the classroom, in the kitchen lab, and in a food truck school. Participants learn the basics of entrepreneurship, hygiene, cost management, marketing positioning, and much more.
- Launching safely: each project leader receives individual support. At the end of the initial training, they can choose to test their business in the DSDA incubator, in a secure and professional setting.
Throughout the program, beneficiaries are supervised by a team incubated by Entrepreneurs du Monde, working closely with professional trainers, partner restaurateurs, and integration and employment stakeholders.
Entrepreneurship when you’re in a precarious situation: a path fraught with obstacles
In France, 1 in 2 people in precarious situations give up on their entrepreneurial projects due to a lack of support.
Without capital, networks, training, and sometimes even guidance, the obstacles are immense, and business start-up support mechanisms often remain too complex or unsuited to their realities. In a sector such as catering, the barriers are even higher: expensive equipment, strict standards, and an intense pace.
Des Saveurs et des Ailes was created to remove these barriers and offer these people the means to succeed, step by step, in a safe and professional environment.

Lydia Habtamu arrived in France in 2009. After gaining various experiences in cooking, she joined the Des Saveurs et Des Ailes training program in 2023.
I already had solid cooking skills, but now I've learned how to run a business. I'm proud that I never gave up and that I'm financially independent. It sets a good example for my children. Now I have bigger dreams: I'm saving up to open an Ethiopian grocery store where I can sell my dishes to go.
Funding from the European Social Fund (ESF+)

In 2025 and 2026, Des Saveurs et Des Ailes is co-funded by the Auvergne-Rhône-Alpes Region and the European Union through the European Social Fund (ESF+), with a total contribution of €208,447. This partnership is a mark of quality and reflects the trust placed in Entrepreneurs du Monde by both European institutions and the Auvergne-Rhône-Alpes Region.
The project, running from January 1, 2025, to December 31, 2026, will support approximately 40 aspiring entrepreneurs in the restaurant sector through a tailored, individualized support program designed to meet their specific needs.
